A buttery biscuit that reveals its jam filling, a jammie dodger is a thing of sublime beauty and a treat for thetaste buds; it’s buttery and crumbly biscuit is sandwichedtogetherwith a sort of sticky and almost chewy jam filling, that stretches as you bite in to it and provides moments of joy……I may be waxinglyricalbut I DO love a good jammie dodger biscuit, especially with a cup of tea! So, why bother to make them, as there is a commercial biscuitfactorythat makes them so well already? Well, it’s because no matter how delicious and tasty these wee raspberry rascals are when liberated from theirgailycoloured packet, home-made ones are so much better and are fun to make too. My recipe is a simple eggenrichedshortbread,fragrantwith real vanilla extract and sandwiched together with home-made ruby-red raspberry jam, made with the raspberries from the bottom of the garden.

Not only do I think my posh jammie dodgers taste better than the shop bought ones, but mine are very floral too, as they are DAISY dodgers!I used a daisy biscuit/cookie cutter when I made these and I LOVE the way they look, as well as how they taste. These jolly biscuits would grace any afternoon tea table, as well as being a fun and tasty addition to the lunch box, and would also be suitable to Red Nose Day bake sales, along with my Red Nose Bunny Biscuits. Not only are these posh dodgers suitable for a bit of fun at a Red Nose tea party or bake sale, but, they would be perfect to bake for you mum thisMotheringSunday.Use any jam that suits, Iloveraspberryjam and it’s my jam “to go” for most cakes and bakes, however, strawberry jam would be great as would a tangy lemon curd. In the past I have also added grated lemon and/or orange zest to my biscuit dough and that adds a lovely citrus zing to these tasty biscuits. (Omit the vanilla extract if you use citrus zest) Why not bake a batch of these next time you go to someone’s house for dinner, pop them on an attractive box, tin or even a large Kilner jar, they make amoreimaginative and thoughtful gift than a bottle of wine.

My version of the commercial Jammie Dodger biscuits made by Burton’s Foods, but just a bit "posher"! I have added a generous slug of vanilla extract and used my own home-made raspberry jam in these, as well as cutting them out to look like daisies! Perfect for any tea party or for a special occasion such as Mother's Day, Easter and Birthday parties. You can use seedless jam if you like, and of course any jam of your choice - I just love raspberry jam in these classic British biscuits.

Ingredients

  • 250g butter, softened
  • 150g caster sugar
  • 1 free-range egg yolk
  • 1 tsp vanilla extract
  • 300g plain flour
  • 6 tbsp raspberry jam (or jam of your choice)

Biscuit/cookie cutters

  • 6cm fluted/flower cutter and a 1.5cm (just over ½in) plain round cutter

Directions

Step 1 Line 2 baking trays lined with baking paper. Pre-heat the oven to 180C/350F/Gas Mark 4.
Step 2 Cream the butter and sugar in a large mixing bowl. Beat in the egg yolk and the vanilla extract. Add the flour and mix in well, using your hands if necessary to make sure it’s all mixed well. Knead gently on a lightly floured surface, then divide into two pieces and form each piece into a ball. Wrap them both in cling film and chill for about half an hour.
Step 3 Remove the dough, and then scatter a little plain flour over a board or clean work surface; roll out one ball of pastry to the thickness of a £1 coin. Using a flower or fluted cutter, cut out as many biscuits as you can. Lightly knead the trimmings together and roll them out again. Once the shapes have all been cut out, then carefully place the biscuits/cookies on a baking sheet, making sure you keep them slightly apart as they spread when baking.
Step 4 Continue cutting out the shapes with the second ball of dough, and then cut out a small circle in the centre of each biscuit using a small biscuit/cookie cutter or using a small water glass.
Step 5 Bake the biscuits for 20 to 25 minutes or until firm and just golden. Remove them from the oven and place them on a cooling rack to cool completely – being careful when you take them off the baking tray as they are fragile and they can crack. Place a teaspoon of jam onto the centre of each biscuit that does NOT have the circle stamped out. Sandwich all the biscuits together with the jam.
OPTIONAL: Sprinkle with icing sugar or drizzle with icing.
